This vibrant dish combines two of my favourite holiday food memories! My husband and I went to Vietnam for our honeymoon and we had the most beautiful time.
In Hanoi we hunted down a tiny hole in the wall where we were served Bun Cha, sitting on tiny plastic stools hunched over our bowls. There was no fanfare about the food, no decoration in what can barely be described an eatery but the bun cha we ate there was the most delicious thing I had ever had in my life! The simplicity of this experience made me realize that far too often we fuss about food when we just need to go back to basics (whatever that is for us).
In Hoi An we often ate at Morning Glory and participated in a cooking class there. It included a bike tour through herb fields first, and then preparing a few dishes in the restaurant. I bought the corresponding cookbook which this recipe is part of. So every time I make this dish now I am reminded of our honeymoon and these two wonderful memories!
