Don’t forget to reserve some of the pasta water. You need it to loosen the sauce and it will make everything creamy and delicious. Without it it’s a bit gluggy and adding regular water doesn’t work as well because you need the starch from the pasta. It used to happen to me all the time that I drained the pasta completely, until I set a cup aside in my pots drawer that I only use for that purpose. Now I take it out as I get the pot ready and it reminds me :).
