Now that it’s spring time, I’ve put together our new capsule recipe collection for this season. The capsule collection is driven by what our life looks like at the moment, what the kids will eat, what I’m capable of preparing ahead or throwing together at a moment’s notice. It’s not the perfect way to eat or an attempt at creating a rigid meal plan. Instead, it is an honest look at what is achievable for us at the moment. I’ve paid some attention to include a bit of everything, wholefoods, grains, legumes, nuts and seeds, lots of vegetables, some meat, and the bulk is made up of plant based meals. There isn’t a lot of dairy or eggs, because of allergies in the family. So your own capsule recipe collection might look entirely different. Which, if you ask me, is the most exciting.
The capsule recipe collection
The aim of the capsule recipe collection is to give you a base for the season. These are the meals you know you can cook and your family loves, so you don’t have to stress each week about what to pick and plan for. It gives you the opportunity to focus on what is in season. It’s your go to collection and the aim is to make it as varied as possible – for the obvious health benefits – while keeping it simple. Not every meal has to be perfectly balanced. Having a closer look at what you eat often will give you the opportunity to make changes. Start with what you know and add in new things over time. Your collection is solely for the purpose of eliminating seemingly overwhelming choices and therefore stress. When you sit down to plan your week ahead, you have your collection to choose from and just add in bits and pieces as required.

Some new things to try
The start of the season is a great moment to focus on what new things you’d like to try. For me, this spring I want to experiment a little with mung beans and tempeh. I haven’t eaten either of these before but am keen to find a few recipes to try them out and see if it fits for us.
Picking only a couple of specific items will make it easier to find some recipes and give it a go. I wouldn’t recommend including new things into your capsule collection until you are sure that it fits your family’s requirements and taste. But setting the intention to try something new in addition to your capsule, will increase your chances of actually making it happen over the course of the next three months.
