Capsicum Pesto recipe

This capsicum is a delicious way to add some to your diet if you are not a fan of eating them raw. I don’t like them raw but as soon as they are roasted it is an entirely different story!

Because my husband can’t eat capsicum, this is also a great way for me to have some on my own. I whip up this pesto/paste and keep it in the fridge in a jar. Then over the course of the week I eat it as a spread on bread or a quick pasta sauce.
Because pesto is so great to stir through your pasta portion yourself, you can have a couple of options on hand and it won’t feel like you are making two seperate meals for the family. I love making pesto because it is so easy and satisfying. How about this raw vegan version, this creamy avocado basil pesto or parsley and cashew… nom, nom, nom.
