Peach, lime and chilli makes for a beautifully fresh side dish at Christmas. I made this salad for the first time about 6 or 7 years ago. Since then it has become a regular Christmas staple at our house. Partly because even after living in Australia for 11 years, it is still wondrous to me to have peaches at Christmas time. And partly because the fruity freshness is absolutely divine with Christmas ham.
It is delicious freshly made on the day but equally satisfying if it has been marinating in the fridge a day or two when you have it as part of your leftover feast in the days after Christmas.
Even though I dearly love this salad, I actually have never made it other than on Christmas Day! Which just goes to show how we can adapt and create new traditions in new surroundings :).
