Every household should have a good chicken soup in their recipe collection if you ask me. It is such a comforting dish that gives you a boost when you’re feeling down. Either physically or mentally, really – our whole body needs comfort sometimes.
This is a bit of a cheats version, because it is not made from scratch, as in boiling a whole chicken. But it is warming, comforting and satisfying nonetheless. It also means that apart from some chopping, you can whip this up rather quickly. The chicken doesn’t need a long time to cook given that you are cutting it in strips.
So for me, this is the way to go at the moment. On a chilly spring day, this is just the remedy when you’re feeling a wee bit down about summer not being quite here yet.
