If you’ve never bought egg replacer before, these wholemeal pancakes are an excellent reason for it! Of course you can use real eggs if you are not vegan or have an allergy in the family. But the genius of egg replacer is that you can make this mix ahead of time and keep it in the pantry until you’re ready to use it. This is the best replacement for store bought pancake mix! Simply add some milk and away you go :).
Choose nut-, oat-, or rice milk to make it vegan – and top with seasonal fruit or compote (how about this one or this). A delicious breakfast the whole family will love.

Update: I used to call them pikelets, hence in the recipe image you can still see the old name (until I fix this darn excel version on my computer and can make the adjustment…). But really, I always make them more like proper pancakes, rather than the smaller pikelet version. It’s a pantry staple for us now. I make up a double batch of the dry mix and store it in Weck jars. Then I only need to add the milk and we have pancakes in a flash. The kids love it.
