I often keep boiled potatoes in the fridge. On stand by so to speak. Or if I boil them for a dish, I usually make extra to have some leftovers. This flecked white cob loaf is just the recipe to use them for! It is originally from Dan Lepard.
Baking bread must be one of the single most satisfying things you can do in the kitchen. At least for me it is. Whilst this isn’t exactly a no fuss recipe, it isn’t very hard either. All you need is some time and a bit of patience. Just a wonderful thing to do on a rainy Sunday for example.
This white cob loaf now forms part of my capsule ‘bread recipe collection’. There’s also a Zopf and a fancy Spelt, Pumpkin and Fennel Bread. and The ones I bake when I have less time are here and here and here. I really want to get to a stage where I mostly produce our own bread, rather than buying any. But I’m not quite there yet.
