“I rarely use recipes to cook from, so our evening meals develop organically during the cooking process. I start with whatever protein I have available, and improvise based on the other ingredients I can find. I love using simple, fresh, local ingredients combined with the beautiful flavours that come from things like pesto, feta, home made stock, anchovies, infused olive oil, roasted garlic that make a meal satisfying and delicious.”
