This choc tahini crunch is my way of adding some amaranth into my diet :). If you can’t find puffed amaranth (I get mine in my local bulk food shop) fear not, puffed brown rice should work just as well.
I came across Emma’s Fudge recipe on Instagram – which is delightful in its own right – and found it was the perfect vehicle for my leftover popped amaranth (which didn’t work as well in muesli as I had hoped).
